The Pure Collective do things “For Love. Not Money.” That’s why they co-founded Sydney’s first profit-for-purpose restaurant by the same name  - Folonomo.

This year Folonomo will host some of Australia's best chefs to host their own intimate pop-up dinners, with all proceeds going to charity. 

Join chef Sharon Salloum from Almond Bar for an incredible Syrian feast, with dishes inspired by Aleppo.

The event will donate all profits to Metro Assist’s "SkillME", a community program that helps newly-arrived refugees, asylum seekers and migrants with skills and qualifications to find suitable employment.

The seven-course menu features:

Kataifi bi Spenegh
Stringy haloumi, spinach and sumac in kataifi pastry, served with Muhamarra

Pumpkin Kibbeh Nayeh

Spiced pumpkin and burghul served with toum bread, mint, shallots, radish

Ocean trout Basturma

Cured trout with basturma coating, served with goats milk labne, almond, shiso

Kingfish and Aleppo crumble

aleppo spice mix, hazelnuts, tarator

Salatet Baqli

Purslane salad

Freekeh bi Shayriyeh

Grilled wheat, smoked eggplant, vermicelli, olives

Halowet il jibin

Sweetened cheese dessert, clotted cream, pistachio

All guests will also get an Aleppo Sour cocktail on arrival. Think vodka infused with cinnamon, sour cherry, lemon, walnut butter and dehydrated passionfruit seeds. There'll also be natural session wines from Newtown's P&V Merchants and craft beer available to add on from Young Henrys.
