This butchery short course covers general organic farming practice a quick overview of provenance, slaughter and storage. Our expert butchers then display how a side of beef is broken down into its primal cuts. Then as a class, we pick up a knife and learn to prepare our own joint of beef. Our Introduction to Butchery class covers firstly organic butchery practice, then we demonstrate how beef is broken down into its primal cuts, whilst at the same time explaining different uses for each cut of meat.
